Nutrition Inspiration & Information
Callaloo is a fast-growing tall leafy green from the amaranth family. It is a highly nutritious green that can be cooked or added to your favorite green juice recipe. Callaloo contains calcium, potassium, vitamin C, iron, protein, lysine and fiber. Cooked callaloo has more nutrients than raw. Jamaicans make a very popular dish with callaloo by stewing the greens with onions, garlic, tomatoes, thyme and Scotch bonnet peppers. Today I paired the callaloo
with ingredients from my local farmer’s market in an effort to enjoy the seasonal goods our Good Food Friends have to offer!
