Easy Marinated Beets

4 Medium sized beets

2 Tablespoons of red wine vinegar

1 teaspoon honey

Virgin Olive Oil

Salt

Pepper

Boil beets, peel, and cut into quarters. Combine the red wine vinegar, honey, salt, and pepper. Whisk in enough olive oil to emulsify. Pour the marinade over the beets and toss to coat. Refrigerate for at least one hour. Stir and serve. For a nice variation add some blue cheese or feta cheese.

Beets

I love beets. They are packed full of minerals, dietary fiber, and vitamins. Beets are very versatile. They can be boiled, peeled, and sliced or diced. They can be baked and peeled eaten whole or sliced. They can be grated raw into a salad. Anyway you cook beets they keep very well in the frig and can be added to a salad or can be served as a side dish cold. Don’t forget the tops. They can be cooked similar to Swiss Chard or spinach.

When boiling or baking beets it is best to leave about 1” of the stem attached as well the root. This will prevent the beet from bleeding out to much and help to retain all of its nutritional value. When cooked cut the very top of the beet off to remove the stem and rub the root off with your hands, this will help the peel to slip off.

Boiled Beets

Cover unpeeled beets with water in a sauce pan. Bring to a boil and cover the pan with a lid. Adjust heat down to a low boil. Boil beets for about 30-45 minutes or until a fork goes thru the largest beet. Drain the hot water off the beets and replace it with cold water. Peel the beets. Slice or dice the beets and serve. I like my beets with a dash of organic apple cider vinegar.

Baked Beets

Baked beets are very sweet. There is something about the baking process that really brings out the sugar in the beets. I like to roast larger beets although any size can be roasted. Trim beets as described above. Coat the beets with olive oil or canola oil salt lightly and place in a baking dish. Bake in a 350 degree oven for about an hour to an hour and half. The beets are done when you can pierce them with a fork easily. Let the beets cool and then peel them. Serve warm sliced, diced, or whole.
